Meyer Lemon Tangerine Spring Salad
Serve this refreshing, citrus salad alongside your favorite spring vegetables, or with meat or poultry fresh off the grill.
- 2-3 cups mixed greens
- 1/2 red onion, thinly sliced
- 1 can mandarin orange segments, drained
- 1/2 bunch grilled asparagus spears, chopped
- 1/2 cup walnuts, toasted and chopped
- feta cheese crumbled
- 1/2 cup dried cranberries
- 3 tablespoons OTO Tangerine Balsamic Vinegar
- 3/4 cup OTO Meyer Lemon Extra Virgin Olive Oil
- 1 tablespoon dijon mustard (optional)
Combine ingredients in a large bowl and toss.
